Six wineries spread throughout the territory – of which five dedicated to wine production and one exclusively meant for the bottling process – where the Colomba Bianca team of oenologists, in collaboration with winegrowers, carry out specific grapes processing, differentiated according to the single varieties cultivated.

The specificity of the territory, the nature of the soils, the different microclimates all find their most authentic expression into a wide and multiform context of production, that focuses on the resource of the Wine, as a distinct element for company’s economic development. Six wineries spread all over the territory – of which five dedicated to the wine-making production and one exclusively meant for the bottling process – where the wine team of Colomba Bianca, working with viticulturists, carry out specific types of grapes processing, differentiated according to the single varieties cultivated.

Vinification and aging processes processes

Colomba Bianca adopted a high-profile approach that better represents a territory oenology, capable of creating – in all the stages of the production chain – an elevated capacity to vinify according to the highest quality standards, as well as a full traceability between vineyard and bottle. In this regard, Colomba Bianca embarked on a path of technological renewal by investing in the modernization of some machinery, such as the introduction of state-of-the-art wine makers for temperature control, and an important and highly advanced analysis laboratory, devoted to monitoring the harvesting and pre-harvesting activities; besides, the company boasts one of the most advanced grape processing production platform of Europe. All of this implies a wealth of information, useful for Colomba Bianca to produce, year by year, fine wines of higher quality.
